From my own grove in Ruvo di Puglia, I harvest early when the olives are still green and full of life. They are cold extracted within hours, preserving their intensity, freshness and natural antioxidants.
The result is a bold Coratina: vibrant green, herbaceous, slightly peppery, the kind of oil that transforms even the simplest dish.
With an exceptionally low acidity of 0.16% and naturally high vitamin E content, this is olive oil in its purest expression.
